SPRING CHALLENGE HONORARY WINNER: Jessie Kolstad

"Stephanie Sinclair and I grew up together. We’ve known each other for at least 16 years. She’s always been very kind to me and she’s always so positive. In the Fall I was going through a really tough breakup with my boyfriend of seven years. Stephanie had been inviting me to different events at her house, at her mom’s house, and other places. I couldn’t motivate myself to go. I didn’t want to around people, let alone people I really didn’t know. I was in a slump of sorts. She stayed consistent and understanding and this Spring I finally gave in and attended an info session for the Team Peanut Four-Week Bodyburn Challenge.
When I walked into that room I was immediately interested and intrigued. There were awesome quotes along the wall and a woman (Bethany) that looked super fit and beamed positive energy. I listened to the presentation and was excited. She was so funny and personable. She opened up about her own personal challenges. I knew that this challenge was something different. It wasn’t another weight watchers, low-carb diet or plan that would end up putting me further behind in my goals. She introduced us to carb cycling (which I had heard of but honestly had no clue about). We learned about amazing supplements and how they helped previous challenge winners succeed. I was ready to begin and feeling really positive about the potential that this challenge could bring. Bethany is an excellent motivator and beams positivity.
I love carb cycling….literally….it’s awesome! You definitely have to practices some restraint (for a day or so maybe because you can probably have it the next day) but it’s not total deprivation like so many other eating plans. The biggest challenge for me was getting five meals in per day and it was simply a mind game. Eat five meals a day?! What?! It’s crazy how eating more can make you lose more! I eat breakfast every day now (which is huge for me) and I am definitely more aware of the carb content of foods. I’ve always been a label reader because my son has an anaphylactic peanut and tree nut allergy but I never really paid attention to carbs.

I knew foods like bread, potato, and rice have high carbs but I had no idea that bananas were so high or even fruit! The energy I’ve felt is so refreshing and exciting. For a long time I wondered if I had a hormonal imbalance because I didn’t have a menstrual cycle, I had bad acne all along my chin, and I was constantly tired. Once I started to address those things I went through the break-up and just felt negative and dark. Now I feel great! I feel recharged! I have energy to go home and hang out with my kid.
I can stay up and do something for myself once in a while. I don’t look at things as negatively as I once did. I find a positive aspect in almost everything. I’m doing a much better job of living in the moment which I have struggled with my whole life.
The group workout was a blast and totally kicked my butt! To learn that I have a “freak,” amount of dormant muscle mass was SUPER exciting for me. I always knew that I was a physically strong woman, but I didn’t know that my body actually has more muscle mass than the average woman my size. I love to lift weights and this just motivated me even more (to get my butt to the gym). I still struggle with it but now that the challenge is done I think I can find a little more time to go to the gym. As a single mom it’s really hard because I always put him first. While it’s my job to do that, I have to show him that I can take care of myself too, and that I deserve my time for myself. I want to show him that it’s possible to set goals and achieve them. I want to show him the value of being positive, of pushing through obstacles, and constantly finding ways to improve ourselves (not because we are unhappy with ourselves but because we CAN).
As crazy as it might sound, equivalent to the positive energy I feel and the loss in inches on my body (6.5 total) the release meeting was really, really impactful. I’m a very guarded person. I don’t trust easily and I often find myself feeling disappointed in the details in my life. How could I never be married? How did I lose a relationship of seven years to a man that isn’t even the father of my son? Why isn’t my sons dad a better role model for him? Why have I struggled to lose weight for 11 years? I found myself opening up at the release meeting but more importantly, I listened to the stories of my peers. I realized that we all have it tough, and some have it quite a bit tougher than others but we aren’t here to measure faults or mess-ups. We need to utilize our support systems in life. It doesn’t make us needy. It allows us to release!!! I need more girlfriends in my life that are positive, fun to be around, and expose me to new experiences.
Team Peanut and the challenge is unlike any other challenge. It won’t leave you feeling deprived. It addresses all realms of your life. It is super easy. You don’t have to count points or keep a journal….you just have to eat real healthy food and lots of it! Who would complain about that?! Bethany acts as a coach and keeps you accountable. The Facebook page provides ideas and motivation as well. I love that this group addressed all parts – mental, emotional, spiritual, and physical. Bethany cares about the carb cycling and tough workouts but she also cares about you and the other struggles you might be having in life. The supplements really take your plan to the next level. The vitamins and fiber are my absolute favorite. The fiber doesn’t upset your stomach but definitely keeps you on a schedule (which is extremely important).
This challenge is definitely a game changer. I feel like my journey was successful and I hope to be a part of the next challenge (with even more experience and comfort)." - Jessie
